2021 GUSTO Shiraz
Tasting Notes
Inky purple colour. Soft nose showing cherry, strawberry and cream along with licorice, star anise and brambly fruit.
Palate is supple, it presents black forest cake, cherry, kirsch and fruit cake notes. Juicy, fresh with balanced silky tannins.
Vineyard & Winemaking Notes
Greenstone Heathcote Vineyard. Enjoys a Mediterranean climate and was specifically planted to produce low yields of superior quality grapes, with 4,500 vines per hectare (over twice the average planting density for the region). Row orientation is also unique, running east-west rather than typical north-south ensuing protection from the hot afternoon sun, crucial for lower berry temperatures that produce lively characters and deep dark fruit flavours. Hand picked fruit at night and delivered to winery in Yarra Valley on following morning, 50% whole bunch ferment, pump over twice a day, leave on skin 12 days.
